This has been my go-to rub for a great pork loin roast for a couple of years. Whether I smoke it on a pellet grill, roast it in the oven, or charcoal grill with indirect heat, the flavor of this rub is just fantastic on pork. It is also delicious on chicken, again, no matter what method I use to cook it. I have an actual porchetta (a pork loin with pork belly still attached to wrap the loin) and plan to cook it this summer for a party. It’s a big hunk of pork!
